Jowar Rotti

The everyday bread of the Deccan plateau. We pat each rotti by hand from freshly milled white jowar, roast it on an iron griddle and flash-cool it so it stays soft for days. Warm on a tawa for 20 seconds and serve with ennegayi or chutney pudi.
